Thanksgiving Aftermath

Ok, it’s official: For you turkey aficionados (of which I am one), I have for you the world’s easiest and down-right tastiest turkey recipe! dijon_turkey.jpg

Note: This is the second year I have done this, and the second time it has turned out absolutely perfect (moist, delicious and beautiful to behold). So, are you ready?

The Magic Recipe:

Let your turkey defrost.

Set it out overnight to get it to room temp (cover it, especially if you have cats like me).

Season the way you like (I do butter, salt, pepper, various spices).

Set it in a turkey pan on a rack in about two cups of water; also put in your favorite trimmings (onions, carrots, potatoes, whatever).

Pre-heat oven at 350.

Cover your turkey, put in the oven and cook for about 3 hours; make sure you baste every hour or so (I use chicken broth).

When your turkey is at 160 or above, uncover and brown for 20 mins or so.

Comes out absolutely perfect!

Go ahead and experiment with variations, that’s what cooking (an art in itself and maybe the most important one!) is all about! But stick to the time and temps and you can’t go wrong. I have done this with a huge bird–22 pounder and nothing was underdone. This year, I poured a few dashes of a good wine over the turkey and more than one person said it was the best gravy they ever had.
